The whole point of having soup as a meal or a snack is largely tied down to notions of making healthy choices that will satiate your body. This recipe however, stands out for its delightful (nearly) all-carb build and a warming flavour profile that speaks to the soul. After all, that's the only reason it has survived centuries to make it to the modern day kitchen.

The recipe in question was reportedly found by cook Coco Larkin in an old book, and slightly improvised for the modern day palette. What's more, she clarifies that this was a recipe that was originally part of an average Italian peasant's diet. Italian peasants swore by something called 'cucina povera', which translates to 'kitchen of the poor'. This philosophy was a frugal, plant-based, and zero-waste diet built on cheap carbohydrates, seasonal vegetables, legumes, and very little meat. This is where ingredients like polenta as well as combinations like bread and soup found their true footing – today, accenting the poshest of meals.
